- 1 1/2 Tbsp. vegetable oil
- 3 c. cooked rice
- 1/2 to 1 c. leftover pork, chicken or beef
- 6 green onions, chopped
- 1/2 tsp. fresh ginger
- 1 green bell pepper, diced
- 6 oz. peas
- 2 eggs
- 2 Tbsp. soy sauce
- 1/2 tsp. sugar
Directions

1Heat oil in skillet on stove over medium heat.

2Add rice and cook, stirring 5 minutes.

3Add meat, green onions, ginger, pepper and peas.

4Push rice mix to side.

5Break eggs into middle of skillet.

6Cook, stirring 1 minute, and serve.

7Makes 6 servings.
