- 1 lb. bacon, diced
- 5 ribs celery, diced
- 2 bunches green onions, diced (separating green and white parts)
- 4 eggs, scrambled
- 1 1/2 tsp. celery salt
- 1/4 c. soy sauce
- 1 large can sliced mushrooms
- 2 qt. cooked rice
Directions

1Fry bacon until done; drain grease, leaving 1/2 of it in pan. Reserve grease.

2Saute celery until almost tender.

3Add white parts of onion and saute 5 more minutes.

4Add rice, celery, salt and soy sauce.

5Moisten with reserved bacon grease as needed.

6Add remaining ingredients.

7Stir quickly and serve.
