- 1/4 cups Canola Oil, Divided
- 1/4 cups Onion, Minced
- 2 Tablespoons Carrots, Peeled And Grated
- 2 Tablespoons Minced Garlic
- 1 teaspoon Seat Salt
- 1/2 teaspoons Chili Powder
- 1/4 teaspoons Pepper
- 1 cup Chicken, Cut Into Very Small Pieces
- 3 Tablespoons Chicken Broth
- 1/4 cups Soy Sauce
- 2 whole Eggs, Beaten
- 3 cups Boiled Rice, (best If 1-2 Days Old)
- 1/2 cups Frozen Peas
Directions

1In a large skillet, heat 1/8 cup oil and saute onion, carrot, and garlic along with salt, chili powder, and pepper. Cook for 1-2 minutes until tender.

2Add prepared chicken, broth, and soy sauce and cook until heated.

3Push ingredients to side of pan and add beaten eggs. Scramble until semi-cooked.

4Add rice and cook on medium high. If pan becomes too dry, scoot rice over and add more oil as needed. Rice should be shiny and should not stick together.

5Add peas and stir-fry another 2-3 minutes.

6Serves 8-10. Delicious!
