- 2 1/4 cups water
- 1 cup white rice
- 1 bunch green onions
- 1 cup snow pea pods
- 2 cloves garlic
- Cooking spray
- 2 eggs
- 2 cups bean sprouts
- 1/2 cup frozen peas
- 1/4 cup soy sauce
Directions

1Place the water and rice in a small saucepan and bring to a boil over high heat.

2Cover and simmer over medium-low heat for 20 minutes, or until most of the water has been absorbed.

3Remove from the heat and let stand for 5 minutes.

4Trim the green onions, discarding the ends, and cut the white and about 1 inch of the green part into thin slices.

5Cut the snow pea pods into thirds.

6Peel and finely chop the garlic or pass it through a garlic press.

7Coat a large skillet with cooking spray and place over medium heat.

8Beat the eggs slightly and pour into the pan.

9Cook, stirring frequently, for 2 to 3 minutes, or until scrambled.

10Remove the eggs from the pan and set them aside.

11Remove the pan from the heat and wipe out the pan with wadded-up paper towels.

12Recoat with cooking spray, and place over medium-high heat.

13Add the snow peas and bean sprouts to the pan.

14Cook, stirring frequently, for 3 to 4 minutes, or until the bean sprouts just begin to wilt.

15Add the green onions, garlic, and frozen peas to the pan and cook, stirring frequently, for 2 minutes.

16Stir in the cooked rice, eggs, and soy sauce and cook for 3 to 4 minutes, or until heated through.
