- 2 eggs, beaten
- 3 Tbsp. salad oil
- 1/2 c. chopped onion
- 6 green onions including tops, chopped
- 1 c. chopped, cooked chicken, ham, pork or shrimp
- 4 c. cold cooked rice
- 2 Tbsp. soy sauce
- 1/2 Tbsp. sugar
Directions

1Fry eggs with salad oil.

2Set aside and cut into small pieces. Mix soy sauce and sugar; set aside.

3Saute onion; add meat, onions and rice.

4Stir until hot.

5Add egg and stir.

6Add soy sauce mixture and stir.
