- 1 small Onion, chopped
- 2 Eggs
- 4 c. Cooked Rice
- 2 tbsp. Soy Sauce
- 1/4 tsp. Pepper
Directions

1In skillet, cook onion in oil until tender.

2Beat eggs and add to onion.

3Stir until the eggs are cooked thoroughly, but not hard.

4Add the remaining ingredients.

5Serve as side dish or as a main dish, add 2 cups of diced chicken or ham and 3 cups of any vegetables.

6Sprinkle with 1/2 cup of grated low fat cheese. Makes 6 servings.
