- 3 egg whites
- 1 Tbsp. peanut oil
- 1 c. finely chopped green onions
- 1/2 c. diced celery
- 1 Tbsp. soy sauce
- 1 clove garlic, minced
- 1 c. frozen peas, thawed
- 3 1/2 c. cold cooked brown rice
Directions

1In small bowl, beat together egg and egg whites; set aside. Place large nonstick saucepan or wok over medium-high heat 30 seconds. Add oil. Heat 30 seconds; add onions, celery and garlic. Cook, stirring constantly, until soft, about 5 minutes. Reduce heat to low; add eggs. Cook, stirring gently, until set, 1 minute. Stir in peas. Cook, tossing lightly, 2 minutes. Sprinkle with soy sauce and toss lightly. Serve immediately to prevent sogginess.
