- 1 lb. shrimp (26 to 30 per pound)
- 1 small can evaporated milk
- 2 eggs, slightly beaten
- 1 Tbsp. vinegar
- 1 c. flour
- Seasoning to taste - salt, pepper (black, red)
- Oil
Directions

1Peel shrimp, leaving fantail if you like.

2Split shrimp down the back and remove vein.

3Mix milk, eggs, baking powder and vinegar together.

4Put shrimp in the mixture and let them marinate for 1 hour.

5Remove shrimp from mixture, then season with salt and pepper, or your favorite seasoning.

6Dip shrimp in flour mix and fry at 380° in oil until light golden brown. (Do not overcook.)
