- 8 Soft-shell crabs, cleaned
- Salt to Taste
- 1/2 c. saltine cracker crumbs, fine consistency
- 1 Tbsp. all purpose flour
- 1 egg, slightly beaten
- 1/2 c. milk
- 3/4 c. salad oil
Directions

1Sprinkle soft-shell crabs with salt.

2Roll in a mixture of fine saltine cracker crumbs, and flour.

3Dip in a mixture of slightly beaten egg and milk; roll in crumbs and flour mixture again.

4Heat salad oil in a skillet.

5Fry crabs in hot fat 3 to 5 minutes on each side, depending on size of crabs.

6Drain.

7Serve with lemon wedges.
