- 3 firm almost ripe tomatoes
- 1 egg, beaten
- 2 Tbsp. milk
- 1 c. cracker crumbs
- 1/4 c. lard, butter or margarine
- salt and pepper to taste
Directions

1Slice tomatoes into 3/4 inch slices.

2Combine eggs and milk. Dip each tomato slice in egg mixture and then into cracker crumbs. Melt shortening and fry coated tomato slices.

3Brown on both sides,

4turning once.

5Season with salt and pepper.
