- 4 medium (half ripe) tomatoes
- 2 1/2 tsp. salt
- 1/4 tsp. pepper
- oil
- 1/2 c. all-purpose flour
- 2 1/2 tsp. sugar
- 3/4 c. evaporated milk
Directions

1Wash tomatoes and cut, unpeeled, into 1/4-inch thick slices. Drain on paper towel.

2Combine flour, salt, sugar and pepper and dust tomato slices.

3Add milk to the remaining flour mixture to make a thick batter.

4Dip floured slices in batter and fry in hot oil until golden brown.
