- 5 medium tomatoes
- 1 box Jiffy corn muffin mix
- 1 egg
- 1/3 c. milk
- cooking oil
Directions

1Fill skillet half full with cooking oil.

2Prepare muffin mix as directed, using egg and milk.

3Slice tomatoes and dip each slice into muffin batter.

4Cook each coated piece for 1 to 2 minutes in hot oil.

5Let drain on paper towel covered plate.

6Salt and pepper to taste.

7Can also use batter for fried squash.
