- 6 small brook trout
- 2 tsp. onion pulp
- 4 Tbsp. lime juice
- 1/2 tsp. salt
- 4 to 6 egg whites, beaten
- 1/4 c. tart white wine
- 1/2 tsp. sugar
- 1/4 tsp. salt
- 1/8 tsp. cayenne
- 2 tsp. powdered ginger
Directions

1Cut onion across; scrape off pulp.

2Mix with lemon juice and salt.

3Marinate fish thoroughly.

4Make batter of egg whites, wine, sugar, salt, cayenne and ginger.

5Beat as stiff as possible.

6Roll fish carefully in batter.

7Saute in butter 6 minutes on each side on low heat in skillet.
