  • 6 small brook trout
  • 2 tsp. onion pulp
  • 4 Tbsp. lime juice
  • 1/2 tsp. salt
  • 4 to 6 egg whites, beaten
  • 1/4 c. tart white wine
  • 1/2 tsp. sugar
  • 1/4 tsp. salt
  • 1/8 tsp. cayenne
  • 2 tsp. powdered ginger

    Cut onion across; scrape off pulp.

    Mix with lemon juice and salt.

    Marinate fish thoroughly.

    Make batter of egg whites, wine, sugar, salt, cayenne and ginger.

    Beat as stiff as possible.

    Roll fish carefully in batter.

    Saute in butter 6 minutes on each side on low heat in skillet.
