Fried Zucchini Cakes

  • 1 1/2 c. grated, unpeeled zucchini, pressed dry between paper towels
  • 2 Tbsp. grated or finely chopped onion
  • 1/4 c. Parmesan cheese
  • 1/4 c. flour
  • 2 eggs
  • 2 Tbsp. mayonnaise
  • 1/4 tsp. oregano
  • salt and pepper to taste

Directions

    Melt 1 tablespoon butter in a frypan.

    Spoon batter (2 heaping tablespoonfuls makes a nice size) into skillet.

    Flatten with spatula.

    Cook over medium heat until browned on both sides. Serve plain or top with tomato sauce and grated cheese or sour cream and chives.
