Frittata(Easter Pie)

Ingredients

  • 12 eggs
  • 1 c. diced, cooked ham
  • 6 slices Genoa salami, cut into 1/2-inch squares
  • 1 c. sharp Provolone cheese, diced
  • 1 c. sliced pepperoni
  • 1/2 c. sliced black pitted olives
  • 1 c. Ricotta cheese
  • 1/2 c. chopped parsley
  • 1/2 c. cooked and chopped mushrooms
  • 1/2 c. chopped green onion
  • salt and pepper to taste

Directions

    Lightly beat eggs in a bowl.

    Stir in rest of ingredients. Prepare a large iron skillet by spraying with Pam or wiping with olive oil.

    Heat pan and fill pan with the egg mixture.

    Cook slowly over moderate heat until bottom half of pie congeals. Remove pan to broiler to cook top half.

    When light brown, remove pie to serving dish and cut into wedges as a pie.

    Can be served hot or cold.
