  • 1 medium onion, chopped
  • 1 medium red or green pepper, cut into strips
  • 1 medium potato, peeled and grated (about 1 cup)
  • 1 cup coarsely chopped broccoli
  • 1 tsp. dried oregano leaves
  • 1/8 tsp. ground black pepper
  • 1 Tbsp. margarine or butter
  • 1 cup cholesterol-free egg product

Directions

    Cook onion, pepper, potato, broccoli, oregano and black pepper in margarine or butter in 10-inch nonstick omelet pan or skillet until vegetables are tender-crisp.

    Beat egg substitute for 2 minutes with mixer at high speed, until light and fluffy; pour over vegetables.

    Cover and cook over medium heat for 5 to 7 minutes until set.

    Serve from pan or carefully invert onto warm serving plate.
