  • 2 eggs, well beaten
  • 1/2 c. milk
  • 1 c. self-rising flour
  • 1 tsp. salad oil or melted shortening

Directions

    Stir milk into well beaten eggs.

    Add flour and beat until smooth.

    Stir in fat and mix until well blended.
  4. 4
    Cut up fruit or vegetables (see following).

    Add to or dip in fritter batter.

    Drop into hot fat (375°) and fry until brown.

    Drain and serve hot with syrup or gravy.

    Yields 12 to 15 small fritters.
