- 2 eggs, well beaten
- 1/2 c. milk
- 1 c. self-rising flour
- 1 tsp. salad oil or melted shortening
Directions

1Stir milk into well beaten eggs.

2Add flour and beat until smooth.

3Stir in fat and mix until well blended.

4Cut up fruit or vegetables (see following).

5Add to or dip in fritter batter.

6Drop into hot fat (375°) and fry until brown.

7Drain and serve hot with syrup or gravy.

8Yields 12 to 15 small fritters.
