- 50 g plain flour
- 2 teaspoons olive oil
- 3 egg whites
- 600 g mixed seafood, IE Prawns, calamari, and scallops

Directions

1Sift the flour into a metal bowel and add the salt, mix the olive oil in with a wooden spoon and mix in 250 ml of water.

2Whisk the egg whites and fold them in gently.

3Fill a saucepan 1/3 full and then bring to 170C (340F), if the oil starts to smoke it has been heated to much, a piece of paper cloth should bubble when dipped inches.

4Dip the seafood into the batter and deep fry in several batches.
