Frosted Kiwi Meringue

- 4 fresh chilled kiwi
- 3 egg whites
- 3/4 c. sugar
- 1 c. chilled whipping cream
- 1/4 c. chopped almonds
- 1/2 tsp. vanilla
- 1/4 tsp. cream of tartar
Directions

1Line the bottom of a 9-inch layer pan with brown paper.

2Beat egg whites and cream of tartar until frothy and add vanilla. Beat in sugar a little at a time.

3Continue beating until it becomes stiff. Spread in pan and bake 1 1/2 hours at 225°.

4Turn off oven and leave inside for 1 more hour to cool slowly.

5Finish cooling at room temperature. Carefully invert pan and place on a plate. Meringue will be crumbly on bottom and around edges.

6Beat whipping cream and 2 tablespoons sugar in a bowl until stiff. Frost meringue gently, starting with sides.

7Sprinkle with almonds and arrange kiwi slices on top.

8Serve.
