Frosty Strawberries

  • 3 egg whites
  • 1 c. sugar
  • 2 Tbsp. lemon juice
  • 16 oz. frozen sliced strawberries in juice
  • 12 oz. Cool Whip
  • 1 (14 oz.) bag Pecan Sandies
  • 1 stick margarine

    Crush cookies into fine crumbs.

    Set aside 1/4 cup of crumbs. Mix remaining crumbs with melted butter in 9 x 12-inch pan.

    Press into pan and bake at 375° for 8 minutes.

    Let cool.

    Use an electric mixer to beat egg whites, sugar, lemon juice and strawberries for 15 minutes on medium speed.

    Fold in Cool Whip. Spread strawberry mixture over cookie crust in pan.

    Sprinkle remaining 1/4 cup crumbs over top.

    Freeze overnight, covered. Serve frozen.
