Frozen Lemon Squares

Ingredients

  • 1 1/4 c. graham cracker crumbs
  • 1/4 c. sugar
  • 1/4 c. margarine or butter, melted
  • 3 egg yolks
  • 1 (14 oz.) can Eagle Brand sweetened condensed milk (not evaporated milk)
  • 1/2 c. ReaLemon lemon juice from concentrate
  • whipped topping or whipped cream

Directions

    Preheat oven to 350°.

    Combine crumbs, sugar and margarine. Press firmly on bottom of an 8 or 9-inch square pan.

    In small mixer bowl, beat egg yolks, sweetened condensed milk and lemon juice.

    Pour into prepared pan.

    Bake 8 minutes. Cool. Top with whipped topping or cream.

    Freeze 4 hours or until firm.

    Let stand 10 minutes before serving.

    Freeze any leftovers.

    (Dessert can be chilled instead of frozen.)
