Ingredients

  • 1 1/2 c. shortening
  • 2 c. sugar
  • 8 eggs
  • 4 c. flour (I use self-rising; leave 2 cups out for fruit)
  • 2 boxes raisins
  • 1 lb. pineapple (candied or canned)
  • 1 lb. candied cherries
  • 1 qt. fig preserves
  • 1 qt. pecans
  • mixed fruit (if desired)
  • 1 tsp. cinnamon
  • 1 tsp. nutmeg
  • 1 tsp. allspice
  • 1 tsp. ginger

Directions

    Mix shortening, sugar, eggs and 2 cups of flour in pan.

    Set aside.

    Then mix all fruit together; put in other 2 cups of flour and all the spices.

    Mix well together.

    Then mix all together in one big pan.

    You can use tube pans or loaf pans.

    It will take 2 tube pans or 4 loaf pans.

    Cook at 350° for 90 minutes to 2 hours.
