  • 1 c. vegetable oil
  • 1 1/2 c. brown sugar
  • 4 eggs
  • 2 c. plus 1 c. flour
  • 1 tsp. baking powder
  • 2 tsp. salt
  • 2 tsp. cinnamon
  • 2 tsp. allspice
  • 1 tsp. cloves
  • 1 c. pineapple juice
  • 1 1/2 c. maraschino cherries
  • 1 c. raisins
  • 3 c. nuts
  • 1 c. citron (or candied fruit)

Directions

    Combine oil, brown sugar and eggs.

    Beat 2 minutes.

    Sift flour with dry ingredients.

    Stir into oil mixture alternately with pineapple juice.

    Mix other cup of flour with fruits and nuts.

    Pour batter over fruit mixture, mixing thoroughly.

    Turn into greased tube pan and bake at 275° for 2 1/2 to 3 hours.
