  • 1 lb. butter
  • 2 c. sugar
  • 4 c. sifted flour
  • 1 lb. candied cherries, halved
  • 1 lb. pecans (2 1/4 c.), coarsely chopped
  • 1 lb. candied pineapple, chopped
  • 1 lb. dates, chopped
  • 6 eggs, separated
  • 1 tsp. lemon extract

Directions

    Cream butter and sugar.

    Add egg yolks and other ingredients. Add beaten egg whites last.

    Cook in 2 greased 9-inch loaf pans at 300° until done, approximately 2 hours.

    Cake is done when it pulls away from side of pan.
