  • 1 1/2 c. flour
  • 1/4 c. brown sugar
  • 1 Tbsp. baking powder
  • 1/4 tsp. salt
  • 1 egg, slightly beaten
  • 1/2 c. milk
  • 4 Tbsp. unsalted butter, melted
  • 1/2 c. diced red and green candied cherries
  • 1/2 c. mixed diced candied pineapple
  • 1/2 c. seedless raisins
  • 2 tsp. grated lemon peel
  • 2 tsp. grated orange peel

    Preheat oven to 400°. In mixing bowl, stir together the flour, sugar, baking powder and salt.

    In a separate bowl stir together the egg, milk and butter, then stir them into the dry ingredients to make a lumpy batter.
