Fruit Cocktail Cake

  • 1 1/2 c. sugar
  • 2 eggs
  • 1/2 c. Wesson oil
  • 2 c. plain flour
  • 1/2 tsp. salt
  • 2 tsp. soda
  • 1/2 c. coconut

Directions

    Mix together sugar, eggs and oil.

    Sift together flour, salt and soda; add the two mixtures together.

    Add one can of drained fruit cocktail and beat 2 minutes.

    Pour into long baking pan.

    DO NOT grease or flour pan.

    Add 1/2 cup coconut sprinkled on top. Bake at 350° for 45 minutes.
