Ingredients
- 2 c. flour
- 1/2 c. brown sugar
- 1 c. butter
- 2 eggs, separated
- 1/8 tsp. salt
- 1 tsp. vanilla
- 1 1/2 c. chopped pecans
- fruit preserves of choice
Directions

1In food processor, combine all ingredients except egg whites, pecans and preserves.

2Shape rounded teaspoonfuls of dough into 1-inch balls.

3In small bowl, beat egg whites until foamy.

4Dip balls into egg whites; roll in finely chopped pecans.

5Place 1-inch apart on greased cookie sheet.

6Make depression in each cookie with back of teaspoon.

7Bake at 375° for 8 minutes.

8Remove from oven.

9Fill centers with preserves.

10Continue baking for 6 to 10 minutes or until light brown.

11Yield:
