Fruit Juice Tapioca Pudding

  • 1/3 cup sugar
  • 3 Tbsp. MINUTE Tapioca
  • Dash salt
  • 2 cups apple juice

Directions

    Mix all ingredients in medium saucepan.

    Let stand 5 minutes.

    Cook on medium heat, stirring constantly, until mixture comes to full boil.

    (Pudding thickens as it cools.)

    Remove from heat.

    Cool 20 minutes; stir.

    Stir before serving.

    Serve warm or chilled.

    Variation: Grape juice, pineapple juice, orange juice, grapefruit juice, cranberry juice, juice blends or mango nectar can be substituted for apple juice.
