  • 8 c. loosely packed fresh spinach leaves
  • 2 c. cantaloupe balls
  • 1 1/2 c. sliced fresh strawberries
  • 2 Tbsp. low-sugar raspberry preserves
  • 2 Tbsp. raspberry white wine vinegar
  • 1 to 2 Tbsp. honey
  • 2 tsp. olive oil

Directions

    Combine spinach, cantaloupe balls and strawberries in a large salad bowl; toss gently. Combine jam and next 3 ingredients in a small bowl; stir with a wire whisk or shake in a covered jar. Drizzle over spinach mixture and toss well. Makes 6 servings. Each has 70 calories and 1.9 g fat.
