  • 1 1/2 c. candied pineapple, chopped
  • 2 c. candied cherries, chopped
  • 1 box golden raisins
  • 4 c. chopped pecans
  • 1/2 c. all-purpose flour
  • 1 pkg. yellow cake mix
  • 4 eggs
  • 1/2 c. orange juice
  • 2 tsp. lemon extract
  • 2 tsp. salt
  • 1 Tbsp. oil

Directions

    Combine fruit and nuts and dredge with flour.

    In a bowl, add the cake mix, 1 egg, orange juice, lemon extract and salt.

    Mix 2 minutes.

    Add remaining eggs, one at a time, beating well.

    Blend batter into fruit.

    Bake at 325° for 30 to 40 minutes as standard size cupcakes (use paper liners).
