Ingredients: 1 1/2 c. candied pineapple, chopped; 2 c. candied cherries, chopped; 1 box golden raisins; 4 c. chopped pecans; 1/2 c. all-purpose flour; 1 pkg. yellow cake mix; 4 eggs; 1/2 c. orange juice; 2 tsp. lemon extract; 2 tsp. salt; 1 Tbsp. oil

4 eggs
1/2 c. orange juice
2 tsp. lemon extract
2 tsp. salt
1 Tbsp. oil

Directions

Combine fruit and nuts and dredge with flour.

In a bowl, add the cake mix, 1 egg, orange juice, lemon extract and salt.

Mix 2 minutes.

Add remaining eggs, one at a time, beating well.

Blend batter into fruit.

Bake at 325° for 30 to 40 minutes as standard size cupcakes (use paper liners).
