Fruited Pot Roast

  • 4 lb. boneless pot roast
  • 1 1/2 tsp. salt
  • 1 c. apple
  • 2 (3-inch) sticks cinnamon
  • 1 c. pitted prunes
  • 2 Tbsp. vegetable oil
  • 1/8 tsp. pepper
  • 1 c. water
  • 6 oz. pkg. dried apricots
  • 1 large cooking apple

Directions

    Brown roast on all sides in hot oil in a Dutch oven; pour off drippings.

    Sprinkle meat with salt and pepper; add apple juice, water and cinnamon sticks.

    Bring to boil; cover and reduce heat. Simmer for 1 hour.

    Add apricots, prunes and apple (peeled and sliced).

    Cover and cook an additional 30 minutes.

    Yields 8 to 10 servings.
