- 3 cups chicken stock
- 3 cups couscous
- 1 medium red onion, finely chopped
- 2/3 cup finely chopped dried apricots
- 7 oz red seedless grapes, halved
- 1/2 cup dried currants
- 1/2 cup sliced almonds, toasted
- 1/3 cup coarsely chopped fresh flat-leaf parsley
- None None FOR THE LEMON DRESSING
- 1/3 cup lemon juice
- 2 tbsp olive oil
- 1 tsp Dijon mustard
Directions

1Bring stock to the boil in medium saucepan.

2Combine couscous and hot stock in large heatproof bowl; cover. Let stand about 5 mins or until liquid is absorbed, fluffing with fork occasionally.

3For the lemon dressing, whisk all ingredients in a small bowl. Season to taste.

4Add remaining ingredients to couscous. Drizzle with dressing; toss gently to combine.
