Ingredients
- 1 tablespoon oil (for frying)
- 2 large onions, chopped
- 1 large apple, peeled, cored and diced
- 500 g beef mince
- 1 crushed garlic clove
- 2 tablespoons flour
- 2 -3 teaspoons curry powder
- 1 cup beef stock
- 12 cup sultana
- 425 g pineapple in juice
- 12 lemon, juice of
- salt
- pepper
Directions

1Heat the oil and fry the onions until transparent.

2Add the apple, meat and garlic, and stir until meat is lightly browned.

3Stir in the flour and curry powder, cook over low heat for one minute.

4Gradually add the stock and bring to the boil.

5Add 1/4 cup of the pineapple juice.

6Simmer for 30 minutes,.

7Add sultanas, drained pineapple and lemon juice.

8Simmer another 30 minutes.

9Add salt and pepper.
-
10Serve with rice.
