  • 4 scoops Carte D'Or Vanilla Ice Cream 100g/200ml
  • 9/16 cup strawberries hulled and diced
  • 5/8 cup raspberries
  • 1 teaspoon balsamic vinegar
  • 1 tablespoon icing sugar
  • 4 meringues
  • 4 sprigs mint
  • 4 1/2 strawberries

    Mix the strawberries, raspberries, balsamic vinegar and icing sugar together in a small bowl.

    Crush the meringues lightly in a large bowl and mix with the Carte D'Or Vanilla Ice Cream.

    Fold the mixed berries lightly into the meringue and ice cream mixture.

    Divide the mix between four serving glasses and garnish each with a sprig of mint and half a strawberry. Serve immediately.
