  • 12 cup pineapple, diced
  • 12 cup cucumber, peeled, seeded and diced
  • 12 cup mango, diced
  • 14 cup red bell pepper, diced
  • 1 garlic clove, finely minced
  • 12 teaspoon gingerroot, grated
  • 14 teaspoon sugar
  • 18 teaspoon chili pepper flakes
  • 1 tablespoon fresh coriander, chopped
  • 12 teaspoon rice vinegar
  • 1 lime, juice and zest of

Directions

    Mix the pineapple, cucumber, mango, pepper, garlic and ginger in a bowl.

    Combine the sugar and chili pepper flakes and sprinkle over the fruit and veggies.
