Fruity Summer Soup

Ingredients

  • 2 c. strawberries
  • 3 Tbsp. sugar
  • 1 Tbsp. cornstarch
  • 1/4 tsp. cinnamon
  • 1 c. orange juice
  • 1/4 tsp. vanilla flavoring
  • 3/4 c. buttermilk
  • 3 c. fruit chunks (banana, peach, apples, oranges, berries, etc.)
  • 1 (16 oz.) cottage cheese

Directions

    Puree strawberries with orange juice and vanilla.

    Combine with sugar, cornstarch and cinnamon.

    Bring this to a boil for 1 minute, then cool to room temperature.

    Stir in fruit and milk and refrigerate overnight or 2 hours.

    Top with cottage cheese.
