Fudge Ribbon Cake

Ingredients

  • 2 Tbsp. plus 1/2 c. butter
  • 8 oz. cream cheese (also works with light)
  • 2 1/4 c. sugar
  • 3 Tbsp. plus 1 1/3 c. milk (I use skim)
  • 1 1/2 tsp. vanilla extract
  • 2 c. flour
  • 1 egg
  • 1 tsp. salt
  • 1 tsp. baking powder
  • 1/2 tsp. baking soda
  • 4 oz. premelted unsweetened chocolate

    Grease and flour bottom of 13 x 9-inch pan.

    In small mixer bowl, combine 2 tablespoons butter, cream cheese, 1/4 cup sugar, egg, 3 tablespoons milk and 1/2 teaspoon vanilla.

    Beat at high speed.

    Combine remaining ingredients in a large mixer bowl.

    Blend well; beat 4 minutes at medium speed.

    Spread half of batter in pan.

    Spoon cheese mixture over batter, spreading carefully to cover.

    Top with remaining batter and spread to cover.

    Do not mix batters.

    Bake at 350° for 50 to 60 minutes.

    Cool and frost (also good with powdered sugar instead of frosting).
