Ingredients

  • 1/2 cup red lentils optional
  • 1/3 cup parsley chopped
  • sea salt
  • cumin
  • olive oil extra virgin
  • 3 lemons quartered
  • 3 cloves garlic crushed
  • 4 cups water *, check occasionally and add more water if needed during cooking

Directions

    -Wash and soak beans overnight.

    -Rinse beans.

    -Add water to pot and bring to a light boil.

    -Add beans, red lentils reduce to low-medium heat and let cook for 2-2 1/2 hours. *Cooking time is determined by the temperature and the desired texture needed. *(I prefer my ful soft/tender) just use your best judgement when tasting to find your desired texture.

    -Serve beans in soup bowls with a drizzle of olive oil, dash of salt, cumin, garlic and sprinkle with parsley.

    -Place lemon wedge as a side along with pita bread.

    Optional (Garnishes): -Hard-boiled eggs, peeled (for non-plant based eaters). -Chopped cucumbers, tomatoes, thinly sliced red onions or scallions. *be creative with garnishes add whatever you like. ;-D
