Gail'S Spinach Casserole

Ingredients

  • 2 (10 oz.) boxes frozen, chopped spinach
  • 1 c. grated sharp Cheddar
  • 1 medium onion, chopped fine
  • 2 beaten eggs
  • 1/2 stick margarine
  • 1 can cream of mushroom soup
  • 3/4 c. mayonnaise
  • dash of garlic powder
  • salt and pepper
  • bread crumbs

Directions

    Cook spinach lightly.

    Drain and squeeze all water out. Combine all other ingredients except bread crumbs.

    Pour into a buttered casserole. Sprinkle with bread crumbs. Bake at 350° for 1 hour. Freezes well if cooked within 10 minutes of doneness.

    Use leftovers for omelettes.
