Gail'S Spinach Casserole

- 2 (10 oz.) boxes frozen, chopped spinach
- 1 c. grated sharp Cheddar
- 1 medium onion, chopped fine
- 2 beaten eggs
- 1/2 stick margarine
- 1 can cream of mushroom soup
- 3/4 c. mayonnaise
- dash of garlic powder
- salt and pepper
- bread crumbs
Directions

1Cook spinach lightly.

2Drain and squeeze all water out. Combine all other ingredients except bread crumbs.

3Pour into a buttered casserole. Sprinkle with bread crumbs. Bake at 350° for 1 hour. Freezes well if cooked within 10 minutes of doneness.

4Use leftovers for omelettes.
