Galveston Gumbo

Ingredients

  • 2 lb. shrimp, shelled and left raw
  • 2 c. okra (fresh), sliced or 1 (10 oz.) pkg.
  • 1/4 c. salad oil or part butter
  • 2/3 c. green onions and tops, finely chopped
  • 3 garlic cloves, finely chopped
  • 1 1/2 tsp. salt (hold until last)
  • 1 tsp. ground black pepper
  • 1 pt. tomatoes, chopped
  • 1 Tbsp. gumbo file
  • 1 tsp. thyme or more to taste
  • 1/4 tsp. hot pepper flakes
  • 6 Tbsp. tomato paste or more to taste
  • 4 c. stock

Directions

    Saute okra in shortening, about 10 minutes, or until okra appears dry, stirring constantly.

    Add green onions, garlic and ground black pepper.

    Cook about 5 minutes.

    Add stock, tomatoes, tomato paste, thyme, gumbo file and red pepper flakes.

    Simmer 1 hour or longer.

    Add shrimp and cook 3 to 5 minutes.

    Serve over cooked rice.
