Ingredients
- 2 lb. shrimp, shelled and left raw
- 2 c. okra (fresh), sliced or 1 (10 oz.) pkg.
- 1/4 c. salad oil or part butter
- 2/3 c. green onions and tops, finely chopped
- 3 garlic cloves, finely chopped
- 1 1/2 tsp. salt (hold until last)
- 1 tsp. ground black pepper
- 1 pt. tomatoes, chopped
- 1 Tbsp. gumbo file
- 1 tsp. thyme or more to taste
- 1/4 tsp. hot pepper flakes
- 6 Tbsp. tomato paste or more to taste
- 4 c. stock
Directions

1Saute okra in shortening, about 10 minutes, or until okra appears dry, stirring constantly.

2Add green onions, garlic and ground black pepper.

3Cook about 5 minutes.

4Add stock, tomatoes, tomato paste, thyme, gumbo file and red pepper flakes.

5Simmer 1 hour or longer.

6Add shrimp and cook 3 to 5 minutes.

7Serve over cooked rice.
