Ingredients
- 4 oz. uncooked angel hair pasta
- 2 garlic cloves, minced
- 2/3 c. chicken broth
- 2 tsp. Dijon mustard
- 2 Tbsp. grated Parmesan cheese
- 1 Tbsp. olive oil or oil
- 1/2 c. sliced green onions
- 1 medium tomato, seeded and chopped
- 1/2 c. chopped arugula leaves or fresh spinach
Directions

1Cook pasta to desired texture as directed on package.

2Drain. Keep warm.

3Meanwhile, heat olive oil in large skillet over medium heat.

4Add green onions and garlic.

5Cook until onions are crisp-tender, stirring frequently.

6Add pasta, tomato, chicken broth and mustard.

7Cook 2 to 3 minutes or until thoroughly heated. Remove from heat.

8Add arugula and Parmesan cheese.

9Toss.

10Serve immediately.
