Ingredients

  • 2 tbsp. butter or marg.
  • 1 small onion, diced
  • 1 garlic clove, minced
  • 1 chicken bouillon cube
  • 1 c. white rice
  • 2 c. water
  • 1/2 tsp. salt, twice
  • 1/8 tsp. ground pepper
  • 3 tbsp. olive oil
  • 1/2 small bunch broccoli, 2x1 inch
  • 2 large carrots, thinly sliced
  • 2 med. yellow squash, matchstick strips
  • 1 c. Half & Half
  • 1 tbsp. flour
  • 2 c. shredded Monterey Jack
  • 2 med. tomatoes, diced

Directions

    In 3 qt. pan melt butter over med. heat.

    Saute onion and garlic until tender.

    Stir in water, bouillon cube, salt and pepper.

    Heat to boiling.

    Stir in rice.

    Reduce heat, cover and simmer 20 minutes, until tender and all liquid is absorbed.
