Garfish Balls

Ingredients
- 1 lb. garfish, ground or scraped
- 3 slices bread, soaked in milk
- 1/2 c. chopped onion
- 1/2 c. chopped bell pepper
- 1 clove garlic, minced
- 1/2 c. chopped celery
- 3 Tbsp. green onion, chopped
- 3 Tbsp. parsley, chopped
- salt and pepper to taste
Directions

1Mix everything together and form into balls; roll in flour. Fry in hot oil until brown on both sides.

2Remove excess grease and make a brown roux with 1 cup flour to 1 cup oil.

3Add chopped onion and stir about 1 or 2 minutes.

4Add 1 to 2 cups water; place garfish balls in gravy.

5Cover and cook slowly for about an hour. Season to taste. Serve over hot cooked rice.
