Garfish Balls

Ingredients

  • 1 lb. garfish, ground or scraped
  • 3 slices bread, soaked in milk
  • 1/2 c. chopped onion
  • 1/2 c. chopped bell pepper
  • 1 clove garlic, minced
  • 1/2 c. chopped celery
  • 3 Tbsp. green onion, chopped
  • 3 Tbsp. parsley, chopped
  • salt and pepper to taste

Directions

    Mix everything together and form into balls; roll in flour. Fry in hot oil until brown on both sides.

    Remove excess grease and make a brown roux with 1 cup flour to 1 cup oil.

    Add chopped onion and stir about 1 or 2 minutes.

    Add 1 to 2 cups water; place garfish balls in gravy.

    Cover and cook slowly for about an hour. Season to taste. Serve over hot cooked rice.
