Garlic-Basil Shrimp

  • 6 oz dried whole wheat or plain fettuccini
  • 2 T EVOO
  • 1 1/4 lbs large shrimp (20 to 25/lb)thawed, peeled, deveined
  • 3 cloves garlic, minced
  • 1/8 t crushed red pepper flakes
  • 3/4 C dry white wine
  • 1 1/4 C grape tomatoes, halved
  • 1/4 C finely chopped fresh basil
  • Salt, pepper
  • Parm. cheese

Directions

    Cook pasta according to package directions, drain and keep warm.

    Meanwhile, heat oil in large heavy skillet over med. heat until hot. Add shrimp, cooking 4 min. and turning once. Transfer to pot with pasta.

    Using oil in skillet, add garlic and red pepper; cook about 30 sec. Add wine and cook 1 to 2 min. Stir in tomatoes and basil. Season with salt and pepper; stir occasionally. Return shrimp/pasta to pan and heat through.
