Garlic Mashed Potatoes

- 1 lb. potatoes (2 large)
- 2 c. skim milk
- 2 large cloves garlic, chopped
- 1/2 tsp. white pepper
Directions

1Peel potatoes; cut in quarters.

2Cook covered in a small amount of boiling water for 20 to 25 minutes or until tender.

3Remove from heat.

4Drain.

5Re-cover the pot with potatoes.

6Meanwhile, in a small saucepan over low heat, cook garlic in milk until garlic is soft, about 30 minutes.

7Add milk-garlic mixture and white pepper to potatoes.

8Beat with an electric mixer on low speed or mash with a potato masher until smooth.
