- 6 lbs standing rib roast
- 3 tablespoons minced garlic cloves
- 1 tablespoon kosher salt
- 12 teaspoon ground black pepper
- 6 bay leaves
- 2 cups red wine
Directions

1Preheat oven to 450F.

2Remove top layer of fat from roast in one piece.

3Slice with a sharp knife while pulling fat strip away from you.

4Reserve fat.

5Mix garlic, salt, and pepper together until it forms a paste.

6Spread paste over roast.

7Top with bay leaves.

8Replace fat strip over roast and secure with string.

9Place roast in pan, ribs down.

10Add wine.

11Cook for 20 minutes.

12Optional to cover roast for this 20 minute period.

13Reduce to 350F and roast another 10 minutes for medium.

14Let sit 10 minutes before serving.
