- 1 lb. shelled shrimp
- 1 garlic bulb
- 1 bunch fresh coriander
- 1/4 tsp. cayenne pepper
- 1 Tbsp. pesto powder
- 1/4 tsp. tarragon
- juice of 1 lemon
- 1/4 c. fresh coconut
- 1/2 stick butter or margarine, melted
Directions

1To melted butter or margarine, add chopped garlic (best if placed in the microwave to cook garlic in butter) or cook on stove the butter and garlic until tender.

2Then add all except lemon, coconut and shrimp.

3Cook for a few minutes.

4Add shrimp.

5Cook until done.

6Do not overcook.

7Add lemon juice and coconut.

8Stir for a few seconds with salt to taste.

9Serve.
