Garlic Shrimp

Ingredients

  • 1/4 c. butter
  • 3 cloves fresh garlic, crushed
  • 8 oz. whole mushrooms, stems removed
  • 1 Tbsp. lemon juice
  • 12 oz. fresh shrimp, shelled and deveined
  • 1 c. white wine
  • 2 Tbsp. cornstarch, mixed with just enough water to dissolve

Directions

    Melt butter in large skillet.

    Add crushed garlic and whole mushrooms.

    Gently mix in lemon juice and shrimp.

    (Add more butter, if needed, at this time.)

    Saute 1 minute on each side, or until pink.

    Add wine; increase heat and bring to a boil.

    Remove from heat and add cornstarch mixture.

    Return to flame until sauce is thickened.

    Serve over rice.
