- 3 lb. potatoes, cut in 2-inch cubes
- 1 small onion, quartered
- 1 1/2 tsp. chopped garlic
- 6 to 8 tsp. margarine or butter
- 1 c. hot milk
- salt and pepper
- 2 Tbsp. chopped chives
Directions

1In heavy saucepan, add potatoes, garlic and quartered onion to 1 inch cold water.

2Cover tightly on high heat; when steam escapes, reduce to low.

3Cook about 15 minutes.

4Drain excess water.

5Place back on heat to dry (30 seconds).

6Mash until smooth.

7Add butter.

8Slowly beat in milk.

9Season.

10Add chives. Keep warm in 275° oven.
