Garlicky Mashed Potatoes *

  • 3 lb. potatoes, cut in 2-inch cubes
  • 1 small onion, quartered
  • 1 1/2 tsp. chopped garlic
  • 6 to 8 tsp. margarine or butter
  • 1 c. hot milk
  • salt and pepper
  • 2 Tbsp. chopped chives

Directions

    In heavy saucepan, add potatoes, garlic and quartered onion to 1 inch cold water.

    Cover tightly on high heat; when steam escapes, reduce to low.

    Cook about 15 minutes.

    Drain excess water.

    Place back on heat to dry (30 seconds).

    Mash until smooth.

    Add butter.

    Slowly beat in milk.

    Season.

    Add chives. Keep warm in 275° oven.
