Ingredients

  • 8 medium potatoes
  • 1/4 c. melted margarine or butter
  • 1 can cream of chicken soup
  • 2 c. sour cream
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 3 green onions or 1 medium onion, chopped
  • 2 c. shredded sharp Cheddar cheese (reserving 1/2 c.)

Directions

    Boil potatoes with jackets in water with a bay leaf.

    Cool, peel and shred in bowl.

    Mix remaining ingredients.

    Add to potatoes.

    Bake in greased 2 1/2-quart casserole dish, uncovered, for 30 minutes at 350°.

    Top with remaining 1/2 cup Cheddar cheese and 1/2 cup crushed corn flakes.

    Bake 10 minutes longer.
