- 8 medium potatoes
- 1/4 c. melted margarine or butter
- 1 can cream of chicken soup
- 2 c. sour cream
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 3 green onions or 1 medium onion, chopped
- 2 c. shredded sharp Cheddar cheese (reserving 1/2 c.)
Directions

1Boil potatoes with jackets in water with a bay leaf.

2Cool, peel and shred in bowl.

3Mix remaining ingredients.

4Add to potatoes.

5Bake in greased 2 1/2-quart casserole dish, uncovered, for 30 minutes at 350°.

6Top with remaining 1/2 cup Cheddar cheese and 1/2 cup crushed corn flakes.

7Bake 10 minutes longer.
